Lycopene is a carotenoid found in cooked tomatoes that is responsible for the anticancer properties and rich red color. Anything made with cooked tomatoes are rich in lycopene. Heat allows for better absorption of lycopene in the body. Fats increase availability of lycopene to the body, and it is beneficial to consume tomato products with olive oil to enhance the amount of lycopene that can be absorbed. There seems to be a link between low incidence of prostate cancer and tomato consumption. Its anticancer effect may be attributed to its action as an antioxidant but this is not conclusive. Or may act directly on certain enzymes interfering with androgen signals, and disturbing the growth of tumors. Lycopene tends to accumulate in the prostate area so it has great utility in that cancer. Tomato paste has the highest lycopene content of all tomato-based products. Tomato paste can be added to sauces, soups, stews.
